All The Veggies Quesadillas

Quesadillas are great as they're so filling and delicious, and a great way to include hidden veg into lunch or dinner with kids! A really quick meal that's healthy and filling all in one! Choose whatever veg you like and enjoy!


You will need:

1 large non-stick frying pan


Serves 2 adults (+ one 3year old toddler for lunch)


Ingredients:

- 4 soft flour tortillas (feel free to use wholemeal or gluten-free)

- Cheese, about 2 big handfuls grated (Red Leicester or Medium cheddar work well)

- 1 pepper, chopped (I favour red/yellow over green for a sweeter flavour)

- A handful of any other veg you like (I used petit pois and sweetcorn in this recipe)


Optional:

- Hummus, yoghurt or my easy classic guacamole to dip!

- Coriander chopped(I love the stuff but some don't!)

- Red Chilli - Deseeded and finely chopped (I left it out for my 3-year-old)


Method:

- Mix up all the ingredients in a bowl

- Spoon half of the mix onto 1 tortilla and the rest onto the second

- Add more grated cheese if needed and then place another tortilla on top.

- Pop them one at a time in the frying pan on medium heat for about 2 minutes on each side

- Aim for really crispy outside and a lovely melty filling. (Checking the bottom so it doesn't burn)

- Take off the heat and cut into "pizza" slices and enjoy!
