Roasted Pepper & Hummus on Sourdough

Hummus goes with so much and it really is yummy spread on toasted soughdough with warm roasted red pepper on top. It's such a simple but filling lunch & it tastes so good.

Top with anything extra you like to add crunch, I went with sunflower seeds and crushed chillies for mine.
Ingredients: ( serves 1 person for a light lunch)
- 1 large slice of sourdough (cut in half)
- 1 small handful of salad leaves (optional)
- 1 large red pepper (orange or yellow work well too!)
- A tub of hummus
- Salt & Pepper to taste and olive oil for the roasting part
Optional:
- Mixed seeds to sprinkle on top
Method: (Prep: 15-20 mins)
- Start off by slicing your pepper into large pieces
- Lightly drizzle olive oil and a pinch of salt & pepper onto the pepper slices and rub in a little
- Either roast in the oven at 200ºC (fan) or pop in your air fryer for 15 mins on 200
- When thats a few mins from being done, toast your sourdough
- Spread a generous amount of hummus on your toasted sourdough
- Add some salad leaves
- Add the sliced roasted pepper on top
- Top off with a sprinkle of pumpkin seeds + crushed chillies or whatever you like!
