Feta, Pea, Edamame & Avocado on Sourdough

Feta is such a summery cheese, you can crumble it over anything and it can make even a simple salad taste amazing! This super simple recipe combines feta with peas and edamame, which is fab for plant-based protein (they actually contain every amino acid your body needs to function*) so you get all that extra green goodness and its topped with everyones favourite fruit to add to your 5 a day, the humble avocado.


Top with anything extra you like to add crunch, I went with sunflower seeds and crushed chillies for mine.


Ingredients: ( serves 2 people for a light lunch)

- 2-4 slices of sourdough

- 1 handful of frozen garden peas

- 1 handful of frozen edamame beans

- 1/2 pack of feta cheese

- 1 ripe avocado cut in half and scooped out

- Juice of 1/2 lemon, or lime

- salt & pepper to taste

Optional: - Crushed chillies

- Sunflower seeds


Method: (Prep: 5 mins)

- Start off by boiling or steaming your peas and beans for 3-4 minutes. Drain and tip into a bowl.

- Toast your sourdough if you like

- Crumble the feta into the bowl of peas and beans with half a squeezed lemon/lime and mix well.

- Chop or slice your avocado.

- Pop your sourdough on plates and evenly spread the bean and feta mix on top

- Add the sliced avocado over the bean mix

- Sprinkle with some salt and pepper

- Top off with a sprinkle of pumpkin seeds + crushed chillies or whatever you like!
