Easy Classic Guacamole

Add a dollop in with your fajitas, plonk on your batch cooked chilli from the night before for lunch or have on its own to dip tortilla chips or chunky bread in... this is the easiest recipe to make and so quick!

You will need: A mini food processor OR a good chopping knife and a fork (you can do by hand too)
Ingredients: (makes a nice amount for a generously-sized dip or to add to fajitas)
- 1/4 red onion
- Juice of 1 lime
- A nice big handful of coriander (optional as I know some people don't love it!)
- 1 ripe avocado (nice and soft)
- 1/4 red chilli (or some chilli flakes)
- 4 cherry tomatoes
- Olive oil
Method (if using a small food processor)
- Peel the onion and deseed your 1/2 chilli and roughly chop into big pieces and pop into the bowl of the food processor
- Cut your avocado in half lengthways and take the stone out then scoop the flesh into the processor bowl
- Add the tomatoes, lime juice, coriander, chilli, a good glug of olive oil and some salt and pepper.
- Whizz until its wither smooth or a bit chunky (it's up to you!) Scoop into a little bowl and serve with a spoon and some coriander leaves on top.
Method (no food processor method)
- Cut your avocado in half lengthways, take the stone out then scoop the flesh into a bowl, mash it all up with a fork (as chunky or fine as you like) - Peel the onion and deseed your chilli and finely chop these, pop into the bowl with the avocado
- Chop the tomatoes and coriander quite finely and add to the bowl and mix
- Pour in your lime juice, a glug of olive oil, some salt and pepper and mash everything together
