Traybake Tomatoey Balsamic Sausages

I make this recipe at least once a week, its a real crowd (husband) pleaser and so easy to make. You pop everything in a baking tray and in 45 mins its ready to be devoured. No chopping or peeling needed, so it's just so easy and quick to prep!
The balsamic in this recipe gives the whole dish a beautiful, sticky-sweet glaze that works particularly well with sweet potato mash and a glass of red on a Sunday eve. Enjoy!

You will need: 1 baking tray (I use a smallish one)
Ingredients: (serves 2) 1 pack (250g) cherry or plum tomatoes (go for the yellow and red mixed ones if you fancy)
1 pack (6) of any sausages you like ( I usually use Lincolnshire Pork from Aldi's Specially Selected range)
Balsamic vinegar
2 sprigs of fresh rosemary or 2 tsp of dried rosemary
1 or 2 fresh sprigs of fresh Thyme or 2 tsp dried thyme
2 or 3 fresh bay leaves
1 tsp mixed dried herbs
Salt + freshly ground black pepper
Olive oil
Method:
- Preheat your oven to 190°C Fan / 375 °F / Gas Mark 5
- Pop all the herbs and sausages in your baking tray
- Drizzle everything with olive oil, a good big glug of balsamic (don't be shy!) and season with lots of salt and black pepper
- Mix it all up with your hands and then spread out a bit so the sausages aren't covered up.
- Place in the oven for 45 minutes (turning once)
TIP:
Serve with sweet potato mash or a crispy jacket potato (See my recipe for Sweet Potato Mash coming soon)
