Super Quick Lunch: Summer Gazpacho

This is super super easy to make and a bit of a showstopper if you have friends round, they'll think you've slaved over it all morning! It's such a simple, ultra-healthy lunch packed with lots of lovely veg like celery, which is rich in vitamins and minerals, let me know what you think of it if you make it!

Prep 5 mins / Cook Time 30 seconds Ingredients:
1/2 pepper (stick to orange, red or yellow as they have a sweeter taste than green ones)
1 stick celery
2-3 big tomatoes
1/2 cucumber
Juice of 1 lemon
1 tbsp oil (extra virgin olive oil or rapeseed
1/2 tbsp red wine vinegar (gives it a little kick!)
Few leaves of fresh basil, be generous!
Salt & pepper to taste
Method:
- Roughly chop all the veg
- Peel and grate or smash the garlic
- Pop these into a food processor with the rest of the ingredients
- Whizz for 30 seconds (depending how chunky you like your gazpacho)
- Pour into bowls
Tear fresh basil over to serve.
TIP: I sometimes add cooked shredded Salmon on top for a bigger meal.
