Speedy lunchtime toastie

When I don't have much time to stop long for lunch at home I always keep some avocados in the fridge and a few cans of tuna in the cupboard for this ultra speedy (and mega healthy lunch). Tuna is full of essential nutrients such as omega-3 fatty acids, magnesium, iron, and vitamin A, B6 and B12. Avocado is loaded with potassium and healthy fats so despite its simplicity this lunch is really quite good for you. It's filling too so will keep you going right up to dinner time with very little effort!


Ingredients

- 1 can tuna (I get tuna in spring water)

- 1 ripe avocado

- Salt & pepper to taste - Your own choice of nuts/seeds for extra sprinkles of nutrition

- 2 x slices of bread (toasted works well for this) - You can use any bread you like: sourdough, granary, gluten free, a good old white loaf or bagels... the list is long!)


Method

- Pop your toast in the toaster

- Open the tuna (drain the water) and put in a bowl

- Cut the avocado open, remove the stone and scoop out the flesh into the bowl

- Add a good pinch of salt and pepper and use a fork to mash everything together really well.

- Put your toasted choice of bread on your plate and spoon the mixture on top... and enjoy!


TIP: Sprinkle on chilli flakes, some rocket leaves, nuts or seeds as you please to add a little more nutrition and extra crunch!
