Simple Smoked Mackerel Pate

Such a simple way to make ready-to-eat mackerel far more interesting. My little recipe is so simple to whizz up in just a few mins. Then all you do is pile it up on your toast and enjoy!

You will need: - A food processor
Ingredients: (serves 2 -3 people)
- Smoked mackerel
- Some bread to toast
- 1 lemon (squeezed)
- 1 tbsp dried parsley (feel free to use fresh if you like)
- ground black pepper, to taste
- 1 small pot of greek yoghurt (natural works fine too!)
Method:
- Peel the skin off the smoked mackerel and pop that in your food bin
- Put the mackerel in a food processor, breaking it up a bit to fit if you need to!
- Add the greek yogurt, juice of 1 lemon, the parsley, and some ground pepper.
- Pop your bread in the toaster!
- Whiz for 20 seconds or so, or until you get a lovely creamy pâté.
- Spoon generously onto your toast
- Top with anything you fancy, I usually add avocado but you can add tomatoes, celery slices or cucumber.
