Quick recipe granola bites

The simplest yummy treat to whip up when you have a spare 10 mins and they're ready to munch on in just half an hour! They're heaven for a little healthy snack or something to grab on the go if you miss breakfast.



You will need: Baking paper

Large flat/shallow baking pan


Ingredients:

- 100g of porridge oats (Gluten free oats work well too) - 1 1/2 tbsps of coconut oil 

- 2 tbsps of nut butter (I like Aldi's Almond butter but whatever you prefer!) - 2 tbsps of runny honey

- 3 tbsps of unsalted raw pistachio nuts roughly chopped (take off the shells) - 1 tsp of vanilla extract - 50g of desiccated coconut (you can find this is local supermarkets easily) - A handful of mixed dried berries (I love Cranberries & Golden raisins or Goji Berries are good too)

Method:

- Preheat your oven to 180°C / Gas Mark 4

- Line a large shallow baking pan with baking paper. 

- Spread the porridge oats thinly over the paper and bake for 15 minutes - Put the nut butter, coconut oil, honey and vanilla extract in a saucepan over a medium heat and stir gently until everything is melted and mixed well. - Pour in the baked oats and all the other ingredients and mix everything really well. - Tip the mixture back onto your the baking papered pan and press down firmly with a large spoon or your hands to about 1cm thick - Pop the baking pan in the fridge for 30 mins to firm up

- Take out and cut into chunks or bars. 


Enjoy with a nice cuppa!


How to store: These can be stored in an airtight container for about 1 week or you can freeze for 3 months, just defrost before indulging!
