Honey Mustard Chicken Salad

A fab way to use up cooked chicken (or shop-bought cooked chicken) for a moorish lunchtime or summer salad that takes just 10 mins!



You will need:

1 pan to boil the water

1 x salad bowl

1 small bowl to mix the dressing


Ingredients: (makes lunch for approx 2 people)

- 300g pasta ( I like shells or farfalle - the bow ties!)

- 3 tbsp mayonnaise (use reduced-fat if you prefer)

- 1 heaped tsp wholegrain mustard

- 1 tsp runny honey

- Approx 300g cooked chicken, torn into rough pieces

- 4 spring onions, thinly sliced (you can use ½ red onion, thinly sliced)

- Small bunch basil, washed and leaves torn

- 4 salad tomatoes or a handful of cherry toms, roughly chopped


Method:

- Cook your pasta (approx 10 mins) then cool under running water

- In a small bowl mix together the mayo, mustard, and a little water so it's not too thick

- In a big salad bowl add the pasta, chicken, onions, basil, and tomatoes, season to taste, drizzle the sauce over then gently mix together and serve
