Easy Puff Pastry Pizza Wraps

These gorgeous flaky pastries have such a feel-good flavour and are perfect for a quick lunch or dinner. You can fill them with anything you want from spinach, mushrooms and peppers to sliced chicken, ham or even tuna. They'll be a hit with the whole family. For the recipe below I've filled mine with mozzarella, spinach and ham.


You will need: - A baking tray


Ingredients: (makes 8 - serves 4 people for a light lunch)

- 1 sheet of ready-rolled puff pastry

- 2 tbsp of tomato purée / or a good big squeeze!

- 2-3 tbsp of tap water

- 1/2 mozzarella ball OR about 70g of grated cheese

- Handful of fresh spinach. (You can use frozen spinach, defrosted with the liquid squeezed out)

- Small handful of torn sliced ham

- 1 egg, beaten with a fork in a small bowl


Method: (Prep: 10 mins, Cook 20 minutes)

- If your puff pastry is in the fridge take it out and leave on the side for about 5 minutes so it's not too hard to unroll.

- Meanwhile mix together the tomato purée and water to a smooth paste in a small bowl

- Unroll the puff pastry in its own baking paper onto a baking tray and cut the pastry (not the paper) into 8 squares and separate them a bit.

- Pre heat your oven to 170Fan

- On the diagonal area of the squares, spread on some of the tomato sauce. Then top with the mozzarella spinach and ham, or your chosen toppings and sprinkle with some mixed herbs and ground black pepper

- Lightly brush the edges of the pastry (that have no sauce/toppings on - the pointed bits) with the egg (or some milk if you dont have egg) - This helps it go golden and crispy on top!

- Take those two corners and wrap them over one another like a little parcel and press together

- Egg wash the tops of the pastries, I also sprinkled over some sesame seeds.

- Pop in the oven and bake for 20 minutes until they're all puffed up and looking lovely and golden.
