Quick And Delicious Chicken Salad

I made this with leftover roast chicken which makes it super quick and then nothing needs cooking, you whizz up the dressing ingredients, chop or spiralise the carrots and voila! Quick lunch that's full of goodness and seriously yum! My husband told me I was "magic" when I made this up for the first time for today's lunch.


Ingredients: (serves 2 for lunch)

- 4 carrots - spiralised (you can also finely chopped into thin batons or grate)

- A good handful of salad leaves ( I use baby spinach)

- Cooked chicken - shredded or lightly chopped up (a lunchtime sized amount)

- 2 x spring onions chopped


For the dressing: - 1 lemon squeezed

- 1 teaspoon tamari (or light soy sauce)

- 1 clove garlic (peeled) - 2 tablespoons of nut butter (I usually use Almond)

- 50ml water

Method:

- Pop your dressing ingredients into a mini food processor or the small bowl of a big one and whizz until smooth (You can whisk all the ingredients but finely chop the garlic first!)

- Mix the main ingredients in a bowl and mix in about half of the dressing

- Drizzle the rest over the top, add flaked almonds & coriander as a topping and serve up!
