Chewy Carrot Cake Cookies

Moorish cookies with just the perfect amount of squish to them, they'll go in one sitting!

You will need:
2 large baking trays (to spread out the cookies on)
1 x mixing bowl
Ingredients: (makes 16-18 cookies)
- 200g soft brown sugar (I use 100g dark + 100g golden caster - anything goes really! )
- 100g roughly grated carrot (approx 2 medium carrots)
- 125g unsalted butter (at room temp)
- 170g plain flour
- 1 tsp mixed spice (or cinnamon)
- 1 medium egg
- 1 big handful of sultanas/goji berries/dried cranberries (I do a mix)
- About 50g nuts (walnut/pecan/flaked almonds all work!)
- 30g desiccated coconut
- 1/2 teaspoon baking powder
Method:
- Preheat your oven to 160 Fan / 180 ° C (non-fan)
- Line the baking trays with baking paper
- Mix the sugar and butter together until smooth in a large mixing bowl
- Add the egg and mix
- Add everything else in and mix until all combined nicely
- Spoon tablespoons of the mix into round balls (spaced out quite a bit as they will spread!)
- Bake for 12-14 mins (12 if you want gooier, they firm up when cooling)
- Leave to cool on a cooling rack for a few mins before indulging!
